German Potato Salad german-potato-salad

Ingredients
- 5 pounds potatoes
- 1 pound bacon
- 1 cup sour cream
- 2 cups mayo
- 1 cup cold water
- 1 tbsp sugar
- 1 onion
Method
- Peel and cube potatoes.
- Boil potatoes until fork tender, but still slightly firm.
- Cook bacon, then crumble. Reserve bacon grease.
- Dice onion and cook in bacon grease until brown.
- Mix bacon, onion, potatoes, mayo, sour cream, cold water, 1 tbsp salt, 1 tbsp pepper, and sugar in an oven-safe bowl.
- Bake for 60 minutes at 350 Fahrenheit. Broil for 5-7 minutes, or until golden brown.

Ingredients
- 5 pounds cheap beef
- 1 pound bacon
- 4 large onions
- 3 cans tomato bisque
- 3 large cans stewed tomatoes
- 4 large cabbages
- 3 large eggs
Method
- Cook bacon and reserve grease. Crumble bacon, then add bacon and grease to the 5 pounds of beef.
- Squeeze liquid out of stewed tomatoes and reserve the liquid. Add the tomato solids into the beef.
- Add egg and rice to beef, mix until homogenous.
- Bring a pot of water to boil. Core the cabbage then add to the pot.
- Wiggle the leaves off the heads of cabbage. Don’t pull the leaves off forcefully, they should release easily. Put the removed leaves aside to cool. Keep any leaves that are too small or have torn.
- Preheat the oven to 350 Fahrenheit.
- Begin to assemble rolls of cabbage. Put a serving of meat in the middle of a leaf of cabbage, then roll tightly like a burrito. Begin layering the completed rolls in a large roasting pan.
- After one layer of rolls is filled, add salt, pepper, tomato bisque, the reserve tomato liquid, and the torn scraps of cabbage leaves on top.
- Repeat until the pan is full or you have run out of ingredients.
- Roast for 4 hours. Time permitting, reduce the temperature to 275 halfway through roasting. Ideally the lower and slower, the better.
